Groundhog Day Lunch

Many of you have heard me speak of Darren's "groundhog day lunch". It happens EVERY SINGLE DAY of the WEEK (minus Sundays, but ONLY IF we eat out). AND it's no surprise, my hubby is a total creature of habit, so deviating from his lunch, in anyway, kind of upsets him. It doesn't necessarily upset his mood, but it upsets his digestive system or stomach.

Here's what the man eats (uh- it gives me the chills just thinking about it):

A Mesquite Grilled Chicken Filet on Whole Wheat Bread... PLAIN
  • The chicken comes from Sam's Club. He microwaves it for 4 1/2 minutes.
  • The chicken is then placed on whole wheat bread, DRY, but toasted.
The smell of the chicken lingers around the house, like the smell of bacon or pancake syrup, so basically for hours. I will admit, the chicken is fantabulous, BUT, if you aren't the one eating it, the smell, to me, is not enticing. It reminds me of my pregnancy days. Blah!

After he eats his chicken sandwich (in less than 2 minutes... does he taste it?), he begins prepping his next item:

A Whole Wheat Tortilla Accompanied with Peanut Butter
  • The whole wheat tortillas are ONLY good if they are from Sam's Club and come in the brown box. AND the peanut butter is ONLY good if it's the "naturally more" kind or freshly ground.
  • After the "fat roll" is assembled, it is strategically rolled, and placed in the microwave for 30 seconds.
This creation started with me when I was on a massive diet. Darren made fun of me, until he tried it and then he couldn't stop eating it. "Fat roll"???? When I run out of bread, I occassionally send Ty to school with a peanut butter and jelly sandwich using the tortillas. His classmates have named this sandwich "fat roll". Hysterical.

I guess you could say Darren gets his sexy figure from his 4 am workout and his groundhog day lunch! I guess although it's a mundane lunch, it pays off. It beats Wendy's.... calorie wise.

  1. It sounds yummy to me! I especially like the PB fat roll. Yum. If you guys haven't tried the organic Peanut Butter "The Bees Knees" I highly recommend it. It does have honey mixed in but is sinfully delicious.
